Huachinango a la Veracruzana

It’s the 2nd birthday {weekend} of The Triangle Plate! I spent it eating great food at the Pueblo Chile Festival, storing up roasted chiles for winter and remembering my cooking “roots.” My Grandma Salazar laid a foundation for what delicious is, my mom followed suit by cooking up a whole childhood full of nourishing and happy food memories for us kids, and then when I ventured out on my own, the culinary world became my oyster. In honor of nostalgia, I’m sharing a favorite recipe that takes me back to those early days of learning my way around Salsa Madres and food exploration in Mexico.

This past week I did my usual slow stroll past the fish counter. Whole, gorgeous fish caught me eye. When things like this happen, I immediately scrap whatever plan I may have had for dinner, and the meal takes a turn devoted to whole fish. Goat Butter, Radishes, & Black Lava Salt

About three weeks ago, we played hookey on a Tuesday night, and headed to Denver to catch a Gipsy Kings concert and a picnic dinner at the Denver Botanic Gardens with dear friends (and fellow food revelers), Nicole and Telly. Between the four of us and their bountiful garden, we had quite a picnic. We started with Nicole’s mushroom crostini which I inhaled because I was starving and it was delicious. Then we pulled out a fresh water buffalo mozzarella from California that I had bought at the Vail farmer’s market a few days before, and paired that with their drop-dead-gorgeous heirloom tomatoes, some olive oil, balsamic, and microgreens.    Continue reading

This past weekend was all about parties. I was to bring an “app” to a Friday night wine party, and another to a girls night on Saturday.
